What do you make if you’re going on a long train or car journey or going to the beach for the day, if you are having a picnic or a party, if you are in a hurry(nota1) or just not very hungry? The answer is: a sandwich. Sandwiches are tasty. They are quick and easy to make. They are portable. You can hold them in your hand. You do not need a knife and fork. Nowadays, sandwiches are the most popular form of fast food you can find, but they are not a modern invention.
In the Middle East people were eating sandwiches centuries ago. They used pita bread, herbs and spices, and even fruit. In Israel, Palestine and Egypt they still eat almost everything, from meat and eggs to salads in pita bread(nota2). In the Middle Ages, people in Europe used a ’trencher’, a piece of stale(nota3) bread, instead of a plate. When they finished eating the food on the trencher, they ate the trencher too. This is similar to a modern ’open’ sandwich, on just one slice(nota4) of bread. In the 17th century, taverns in Holland served bread and butter with meat filling(nota5). In the 19th century, men and women started working in factories and sandwiches became a popular, cheap packed lunch(nota6).
How did the sandwich get its name? In Britain in 1762 John Montagu, the fourth Earl of Sandwich, did not want to interrupt his card game to go to dinner. He asked his manservant to bring him some beef(nota7) between two slices of bread. Soon his friends were asking to have the “same as Sandwich“ and the sandwich was born.
Nowadays in Britain, sandwiches are not just ’bread with meat’ or ’bread with cheese’. A sandwich is still basically bread, a spread(nota8) and a filling. A ’BLT’ – grilled bacon, lettuce and tomato, with mayonnaise – is still a popular sandwich. But now, instead of slices of bread, you can use Mexican tortillas(nota9) and make wraps(nota10). You can choose French baguettes or Polish bagels. You can fill the pocket(nota11) of Greek pita bread with practically anything. Be creative and invent your own favourite filling. And pizza? Pizza also belongs to(nota12) the sandwich family. It’s a kind of hot, open sandwich.
